This is a flat-bottomed wok, which is the best type in my opinion because it’s more versatile in terms of the stoves it’s suitable for.

- Always use a non-metal spatula.
- There is beeswax adhered to the wok to prevent rusting while in storage. To remove before first use, place in the oven upside down on some greaseproof paper at 200 F for 20 minutes.
This is quite a heavy-duty wok, which to me is a good thing because a wok needs to be robust if it is to have any durability.
As far as heat distribution goes, it’s probably the most important element of Asian cooking. This Mauviel wok gets hot and stays hot, which is perfect for stir-frying. I cooked some pineapple fried rice in it and the result was exquisite.
